Pierre Koffmann is one of the most influential chefs ever to cook in Britain. At La Tante Claire in London he held three Michelin stars and shaped a generation of the country’s finest cooks. This dinner is our tribute to the master, a menu built around the dishes that made his name.

Duncan’s own cooking carries a thread back to Koffmann’s kitchen, and these are the plates he has chosen to honour it. Each is a genuine Koffmann classic, cooked properly and served as it should be.
